About This Recipe

This Taco Bowl brings Mexican-inspired flavors to the trail with a protein-packed combination of rice, couscous, TVP, and refried beans. It's filling, nutritious, and quick to prepare—perfect for satisfying hunger after a long day of hiking!

The fried shallots add a delicious crunch, while the nutritional yeast provides a subtle cheesy flavor.

Tips

  • For extra heat, add some chili powder or cayenne pepper to the seasoning mix, for a less spicy option substitute the taco seasoning for 1 tsp paprika powder, 1 tsp cumin, 1 tsp garlic and 1 tsp onion powder
  • Consider bringing a few corn chips or tortillas to eat with your taco bowl
  • For a fresher taste, pack some freeze-dried corn or bell peppers

Storage

Store the sealed bags in a cool, dry place. This meal will stay fresh for 1-2 weeks on the trail (the shallots may get a little soft but will still taste great). Make sure the refried beans and seasonings stay dry to maintain the best flavor and texture.
